Dynamic Team Members Elevate Culinary Programing at Fort Lauderdale's Premiere Luxury Property

The Ritz-Carlton, Fort Lauderdale brings a new energy to its culinary team with the recent appointments of Master Chef Fabien Gnemmi as the food and beverage director and Gavin Pera as executive sous chef of the resort. Additionally, the property welcomes South Florida culinary darling and Hell's Kitchen's Season 5 finalist, Paula DaSilva, as chef de cuisine and Jean-Pierre Belonni as head bartender of Burlock Coast, the property's signature, oceanfront restaurant.

Master Chef Gnemmi will now oversee all culinary operations on property, guiding the team to use their individual strengths in a cohesive manner. With more than 15 years in The Ritz-Carlton family, Gnemmi will ensure the quality the brand is known for remains, all the while also encouraging innovation to continually progress the culinary experience at the hotel. 

As executive sous chef, Pera will now be responsible for overseeing all food outlets, banquets and Club Level culinary presentations on property, where he will bring his passion for locally sourced ingredients and artisan products.

Meanwhile, Chef de Cuisine DaSilva will now helm the kitchen at Burlock Coast. Known for her imaginative, farm-fresh dishes rich with the flavors and freshness of South Florida's abundant flora and fauna, DaSilva will maintain the standards Burlock Coast is known for, while introducing her soulful cooking style that is synonymous with her name. As a complement, Head Bartender Jean-Pierre Belonni will use his expertise to craft innovative cocktails that pair perfectly with the restaurant's seafood centric cuisine.
